Ingredients

Chocolate and Cream

  • 10 oz (300 g) vegan chocolate or vegan chocolate chips
  • 8.5 oz (240 g) full-fat coconut milk cream (the firm part)

Coating

  • About 1/2 cup cocoa powder for dusting


Instructions

  1. Chop Chocolate Into Pieces: If using a chocolate bar instead of chips, chop the chocolate into small pieces using a chef’s or serrated knife to help it melt evenly.
  2. Melt the Chocolate: Set up a double boiler by placing a glass bowl over a pot of simmering water. Add the chopped chocolate to the bowl and stir continuously with a spatula until the chocolate melts smoothly, which typically takes 5-7 minutes. Ensure the water is at a low simmer and does not touch the bowl to prevent burning.
  3. Add Coconut Cream: Using coconut cream separated from full-fat coconut milk refrigerated overnight, add about 8.5 oz (240 g) to the melted chocolate. Stir thoroughly to combine into a smooth mixture. Transfer the mixture into a shallow baking dish and chill it in the freezer for approximately 30 minutes to firm up.
  4. Form Balls: Once the mixture is chilled and firm, use a cookie scoop or tablespoon to portion out small amounts and shape them into balls. Place these balls on a parchment-lined baking sheet to prevent sticking. Freeze them for 10-15 minutes to make rolling easier.
