Description

Sunshine Salad is a refreshing and colorful dessert salad featuring orange gelatin mixed with pineapple tidbits and grated carrots. This easy-to-make salad is chilled until set, offering a perfect balance of sweet, tangy, and crisp textures, ideal for summer gatherings or potlucks.


Ingredients

Gelatin Base

  • 1 small (4-serving) box orange jello
  • 1 cup boiling water
  • 1 pinch salt

Fruit and Vegetables

  • 1 (8-ounce) can pineapple tidbits (or crushed pineapple, juice reserved)
  • 1 cup grated carrots (or coleslaw mix)

Liquid Mix

  • 2 teaspoons lemon juice (or vinegar)
  • Pineapple juice reserved from can
  • Cold water (to complete 1 cup liquid)


Instructions

  1. Dissolve Gelatin: In a large heat-resistant bowl or heat-resistant serving dish, dissolve the orange jello along with a pinch of salt in 1 cup of boiling water, stirring thoroughly until fully dissolved.
  2. Prepare Liquid Mix: Combine the reserved pineapple juice with 2 teaspoons of lemon juice and enough cold water to make a total of 1 cup of liquid. Stir this mixture into the dissolved gelatin until well incorporated.
  3. Chill Gelatin Base: Transfer the gelatin mixture into a mold or keep it in the serving dish if not unmolding. Refrigerate for about 20 minutes until it becomes slightly thickened, which will help suspend the solids evenly.
  4. Fold in Fruits and Vegetables: Using a fork, gently fold in the grated carrots and pineapple tidbits evenly into the thickened gelatin. Make sure to distribute the solids evenly and push some to the edges of the mold for a nice presentation.
  5. Set the Salad: Refrigerate the salad for at least 4 hours or preferably overnight until it is fully set. If using a mold, unmold before serving.

Notes

  • Use crushed pineapple if tidbits are not available, but drain the juice carefully to prevent the gelatin from weakening.
