Description

These Pistachio Tiramisu Cups offer a delightful twist on the classic Italian dessert by incorporating creamy pistachio flavors with the traditional mascarpone and espresso layers. Perfect for an elegant dessert, these cups layer delicate sponge cake soaked in espresso with a luscious pistachio mascarpone cream, topped with chopped pistachios and a dusting of cocoa powder for a nutty, rich, and refreshing treat.

Ingredients

Base

  • 2 cups sponge cake pieces (or Ladyfingers)
  • 1 cup espresso

Pistachio Cream

  • 1 cup mascarpone cheese
  • 1 cup heavy cream
  • ½ cup powdered sugar
  • 3 tablespoons pistachio butter
  • ¼ cup unsalted chopped pistachios
  • 2 tablespoons cocoa powder (for dusting)

Instructions

  1. Make The Pistachio Cream: Using a stand mixer or a large bowl with a whisk, whip the heavy cream and powdered sugar together until stiff peaks form, ensuring the mixture is light and airy. Then add the mascarpone cheese and pistachio butter to the whipped cream and continue beating until the mixture thickens and blends smoothly into a rich pistachio cream.
  2. Prepare The Base: Cut the sponge cake into small cubes approximately half to one inch in size. Brew fresh espresso and set it aside, ready for soaking the cake layers.
  3. Assemble The Tiramisu Cups: Begin by placing a layer of sponge cake cubes or ladyfinger pieces at the bottom of each serving cup. Spoon about one tablespoon of espresso over each layer to soak the cake lightly. Then pipe or spoon a generous amount of the pistachio mascarpone cream over the soaked cake. Sprinkle chopped pistachios over the cream to add a crunchy texture and enhance the pistachio flavor.
  4. Repeat the layers once more with soaked cake, pistachio cream, and chopped pistachios, ensuring each cup is filled evenly. Finish with a final layer of pistachio cream to reach the top of the glass. Smooth the surface using a spatula or knife for a clean presentation.
  5. Chill And Serve: Refrigerate the assembled cups for at least one hour to allow the flavors to meld together and the cream to set. Before serving, dust the tops generously with cocoa powder and optionally sprinkle additional chopped pistachios for decoration and extra crunch.

Notes

  • You can substitute sponge cake with ladyfinger biscuits as a more traditional option for tiramisu.
  • Ensure the espresso is cooled before soaking the cake to prevent melting the cream layers.
  • For a stronger pistachio flavor, add a bit more pistachio butter or garnish with crushed pistachio pieces.
  • Make sure the heavy cream is cold before whipping to achieve better volume and stiff peaks.
  • Chilling the dessert for longer than an hour can enhance the melding of flavors further.
