  • 2 tbsp (30mL) Walden Farms Pancake Syrup, or your choice of sticky sweetener
  • 1 tbsp (14g) Light Butter
  • 2 tbsp Water

Icing

  • 1/3 scoop (10g) Vanilla Protein Powder
  • 1 tsp Swerve Confectioners
  • 1 tbsp (15mL) Unsweetened Almond Milk


Instructions

  1. Mix Dry Ingredients: Combine the all-purpose flour, vanilla protein powder, ground cinnamon, baking powder, and Swerve granular in a mug or small bowl. For cleaner sides, mix in a separate bowl and then transfer to a mug sprayed with nonstick cooking spray.
  2. Add Wet Ingredients: Stir in the Walden Farms pancake syrup, water, and light butter into the dry mixture until well combined.
  3. Microwave the Cake: Microwave the mug cake for 60 to 70 seconds or until it is cooked through the center. Be careful not to overcook, as the texture can become tough.
