Description

This Easy Bisquick Strawberry Shortcake recipe is a quick and delightful dessert featuring juicy macerated strawberries layered with tender, golden Bisquick biscuits and fluffy whipped cream. Perfect for a summer treat or any time you crave a light, fruity dessert.

Ingredients

Strawberries

  • 1 quart strawberries, sliced
  • ½ cup sugar (for macerating strawberries)

Biscuit Dough

  • 2 ⅓ cups Original Bisquick Mix
  • ⅓ cup milk
  • 3 tablespoons sugar
  • 4 tablespoons butter, melted
  • Sugar, for sprinkling on top

Assembly

  • ½ cup whipped cream

Instructions

  1. Prep the Strawberries: In a medium bowl, combine the sliced strawberries with ½ cup sugar. Stir well and let them sit at room temperature for about 1 hour to release their juices and become juicy and flavorful.
  2. Preheat the Oven: Set your oven to 425°F (220°C) to prepare for baking the biscuits.
  3. Make the Biscuit Dough: In another medium bowl, mix together the Bisquick mix, milk, 3 tablespoons sugar, and melted butter until a soft dough forms. Be careful not to overmix to keep the biscuits light and tender.
  4. Shape and Bake the Biscuits: Drop the dough by rounded tablespoonfuls onto an ungreased cookie sheet, forming 6 mounds. Sprinkle the tops lightly with sugar. Bake in the preheated oven for 10 to 12 minutes, or until the tops turn golden brown.
  5. Assemble the Shortcakes: Place one biscuit on a plate, add a few dollops of whipped cream, followed by a generous layer of macerated strawberries. Top with another biscuit and repeat the layering. Finish by adding extra whipped cream and a strawberry on top. Optionally, drizzle some of the extra strawberry juice on the bottom of the plate for added flavor and presentation.

Notes

  • For best results, use fresh ripe strawberries.
  • Don’t overmix the biscuit dough to keep it tender.
  • Let the strawberries macerate long enough to get juicy.
  • You can substitute whipped cream with a dairy-free alternative if needed.
  • Serve immediately after assembling for optimal texture and flavor.
