Description

Decadent and rich Chocolate Box Brownies made with quality dark chocolate, ground almonds, and topped with leftover chocolate box sweets. These brownies have a fudgy texture with a slight crumble on the edges, perfect for sharing and gifting.


Ingredients

Chocolate Mixture

  • 150 g (5.3 oz) good quality dark chocolate (or dark chocolate chips)
  • 180 g (1/3 cup) unsalted butter

Wet Ingredients

  • 3 large eggs
  • 265 g (1 1/3 cups) golden caster sugar

Dry Ingredients

  • 60 g (1/2 cup) plain (all-purpose) flour
  • 40 g (1/3 cup) cocoa powder
  • ½ tsp baking powder
  • 60 g (1/2 cup) ground almonds

Topping

  • 16 leftover chocolate box sweets


Instructions

  1. Preheat the Oven: Preheat your oven to 180°C (350°F) fan setting. Line a 20 cm x 20 cm baking tray, about 3 cm deep, with baking parchment, leaving some overhang on the sides to easily lift the brownies out later.
  2. Melt Chocolate and Butter: Place the dark chocolate and unsalted butter into a heatproof bowl over a pan of simmering water, making sure the bowl doesn’t touch the water. Stir the mixture until fully melted and smooth, then allow it to cool slightly.
  3. Combine Sugar and Eggs: Once the chocolate and butter mixture has cooled, add in the golden caster sugar and large eggs. Whisk thoroughly to combine and create a smooth batter.
  4. Add Dry Ingredients: Sieve the plain flour, cocoa powder, and baking powder over the chocolate mixture. Add the ground almonds as well.
  5. Fold Gently: Using a figure-eight folding technique, gently fold the dry ingredients into the wet mixture to maintain airiness and avoid overmixing which can toughen the brownies.
  6. Pour into Tray: Transfer the brownie batter into the prepared baking tray, spreading it out evenly.
  7. Add Chocolate Toppings: Evenly arrange the 16 leftover chocolate box sweets on top of the brownie batter, pressing them lightly into the mixture to secure.
  8. Bake: Place the tray in the preheated oven and bake for 25 minutes. The brownies should be set on the edges but slightly soft in the middle.
  9. Cool in Tray: Remove the brownies from the oven and allow them to cool completely in the tray to firm up.
  10. Slice and Serve: Lift the brownies out of the tray using the overhanging parchment. Place on a chopping board, use a sharp knife to slice into 16 portions. Note that the brownies will crumble slightly, but this lessens as they cool.
  11. Optional Decoration: Dust the brownies with icing (confectioners’) sugar for a nice finishing touch before serving.
