Description

Banana Turon is a classic Filipino snack featuring ripe baby bananas and sweet jackfruit wrapped in crispy lumpia wrappers, air-fried to golden perfection. This delightful treat combines caramelized sugar glaze with the natural sweetness of tropical fruits, making it an irresistible dessert or snack, perfect on its own or served à la mode with ice cream.


Ingredients

Fruits

  • 4 pieces ripe baby bananas (or plantain)
  • 2 to 3 arils ripe jackfruit (cut into strips)

Wrapper & Coating

  • 16 pieces lumpia wrapper (separated)
  • 4 to 5 tablespoons light brown sugar
  • 1 to 2 tablespoons olive oil
  • Water (to seal lumpia wrappers)


Instructions

  1. Preheat Air Fryer: Preheat your air fryer to 370°F (188°C) and set the timer for 16 minutes to prepare for cooking the turon.
  2. Prepare Bananas: Cut each baby banana lengthwise into four slices to create thin banana strips ideal for wrapping.
  3. Prepare Wrapper: Lay one lumpia wrapper flat on a plate. Position it so it looks like a diamond shape (or two triangles joined). Lightly brush the surface with water to make sealing easier.
  4. Assemble Filling: Place one slice of baby banana and one strip of jackfruit in the center of the wrapper. Sprinkle lightly with brown sugar for sweetness.
  5. Roll the Turon: Fold each side of the wrapper over the filling and then roll tightly. Seal the edges by brushing lightly with water.
  6. Make Brown Sugar Glaze: In a small bowl, mix the remaining brown sugar with one tablespoon of water to create a glaze mixture; no need to dissolve fully.
  7. Glaze the Turon Rolls: Drizzle the brown sugar glaze over each lumpia roll for extra caramelization and flavor. Repeat this for all 16 rolls.
  8. Prepare for Air Frying: Place the turon rolls gently onto two air fryer trays. Lightly brush the rolls with olive oil on one side.
  9. Arrange Rolls in Air Fryer: Slowly insert the trays into the air fryer in the middle cooking chamber, near the rotisserie catch to ensure even cooking.
  10. Cook and Flip: Halfway through cooking (around 8 minutes), turn each roll over and brush the other side lightly with oil to attain a crisp golden color.
  11. Finish Cooking: Once the lumpia wrappers turn golden and crispy (after about 16 minutes total), remove the trays from the air fryer.
  12. Serve: Arrange the golden banana turon on a platter. Serve them warm as-is or with your favorite ice cream for a delightful Turon à la Mode dessert, especially enjoyable during summer.

Notes

  • If you don’t have an air fryer, these can be traditionally deep-fried, but air frying reduces oil content and is healthier.
  • Baby bananas (also known as saba bananas) can be substituted with small plantains if unavailable.
  • Adjust the sugar quantity according to your preferred sweetness level.
  • To seal the wrappers, water works best, but lightly beaten egg white can also be used for a stronger seal.
