Ingredients
Wet Ingredients
- 3/4 cup (180ml) soy milk
- 1/2 cup (130g) Biscoff spread
- 1/4 cup (60ml) vegan butter, melted
- 1 tsp vanilla extract
- 1 tbsp apple cider vinegar
Dry Ingredients
- 2 cups (220g) plain flour
- 1/2 tsp baking powder
- 1 tbsp tapioca flour
- 3 tbsp granulated sugar
Instructions
- Preheat the waffle maker: Turn on your waffle iron and let it heat up fully to ensure crispy results.
- Make vegan buttermilk: In a medium-sized bowl, combine soy milk and apple cider vinegar. Let it sit for a few minutes to curdle slightly, creating vegan buttermilk.
- Mix wet ingredients: In a large mixing bowl, whisk together the vegan buttermilk, melted vegan butter, Biscoff spread, soy milk, and vanilla extract until the mixture is smooth and creamy.
- Add dry ingredients: Sift in plain flour, baking powder, tapioca flour, and add granulated sugar to the wet mixture. Stir gently with a wooden spoon or silicone spatula until just combined—avoid overmixing to keep waffles light.
- Prepare the waffle maker: Use a pastry brush to lightly grease the hot waffle iron with your preferred oil to prevent sticking.
- Cook the waffles: Pour enough batter into the waffle maker to cover the grid, close the lid, and cook for 5-7 minutes or until the waffles turn golden brown and crisp.
- Serve: Carefully remove the waffles and serve immediately. Drizzle extra Biscoff spread on top and add your favorite toppings such as fresh fruit, nuts, or vegan whipped cream. Enjoy!
Notes
- For best results, do not overmix the batter to keep waffles tender.
- You can substitute soy milk with any other plant-based milk like almond or oat milk.
- Adjust cooking time depending on your waffle maker’s heat intensity.
- Store leftover waffles in an airtight container and reheat in a toaster for crispy texture.
- Use tapioca flour to improve the texture and crispiness of the waffles.
