Mousse Base
- 22 oz Silken Tofu (drained)
- 8 tbsp Unsweetened Cocoa Powder
- 1 cup Dark Brown Sugar (organic)
- 4 tsp Pure Vanilla Extract
- 2 tsp Marsala Dessert Wine
Instructions
- Prepare the chocolate: Place a heavy-bottomed pot on the stove and bring water to a gentle simmer. Set a mixing bowl over the pot (bain-marie) ensuring it doesn’t touch the water. Add the vegan dark chocolate to the bowl and stir continuously with a silicone spatula until the chocolate is completely melted and smooth. Remove the bowl from heat but keep it on the pot to maintain warmth.
- Add ingredients to processor: Drain the silken tofu thoroughly and add it to a high-speed food processor along with the unsweetened cocoa powder, dark brown sugar, pure vanilla extract, Marsala dessert wine, and the melted chocolate mixture.
- Blend to mousse consistency: Blend on high speed until the mixture is smooth and creamy. Stop occasionally to scrape down the sides with a silicone spatula to ensure all ingredients are well incorporated and the texture is consistent and mousse-like.
- Chill and serve: Spoon the mousse into mason jars or small serving glasses. Top each serving with fresh raspberries and chocolate chips or flakes for garnish. Refrigerate for at least one hour to let the mousse set before serving.
