Instructions
- Preheat Oven: Preheat your oven to 325°F (165°C) to ensure it’s hot and ready for baking the banana bread.
- Mix Bananas and Eggs: In a large mixing bowl, use an electric mixer to combine the very ripe bananas and eggs. Mix thoroughly until the mixture is smooth and free of large lumps.
- Add Cake Mix: Add the butter pecan cake mix to the banana and egg mixture. Continue mixing just until the cake mix is fully incorporated. Avoid over-mixing to keep the bread tender.
- Prepare Loaf Pans: Spray two 8.5 x 4.5-inch loaf pans with a non-stick spray like Pam.
- Divide Batter: Evenly divide the batter between the two prepared loaf pans, spreading it out evenly.
- Add Toppings: Sprinkle pecan pieces evenly over the batter in both pans, then sprinkle Skor bits evenly on top of the pecans to add a crunchy toffee layer.
