Ingredients

Cookie Dough

Filling

  • 1 cup jam (of choice) or Nutella


Instructions

  1. Preheat Oven and Prepare Baking Sheet: Preheat your oven to 350˚F and line a rimmed baking sheet with parchment paper to prevent sticking and for easy cleanup.
  2. Cream Butter and Brown Sugar: In a stand mixer fitted with the paddle attachment, combine the unsalted butter and brown sugar. Cream them together at medium speed for 2 to 3 minutes, until the mixture becomes light and fluffy, incorporating air for a tender cookie.
  3. Add Egg Yolk and Vanilla: Scrape down the sides of the bowl to ensure even mixing. Add the egg yolk and vanilla extract, mixing at medium speed for 30 seconds until fully incorporated into the batter.
  4. Incorporate Dry Ingredients: Add the all-purpose flour and salt to the mixture. Process at low speed just until no streaks of flour remain; avoid overmixing to keep the cookies tender.
  5. Shape Cookies and Create Indents: Use a 1 tablespoon-sized cookie scoop to portion the dough evenly. Roll each portion into a ball and place on the prepared baking sheet, spacing about 2 inches apart.
