Description
A quick and delicious banana bread mug cake made in just minutes using common pantry ingredients and a microwave, perfect for a single serving dessert or snack.
Ingredients
Wet Ingredients
- 1 & 1/2 tbsp butter
- 2 & 1/2 tbsp brown sugar
- 1 egg yolk
- 1 & 1/2 tbsp milk
- 1 small banana (about 95 grams, mashed)
Dry Ingredients
- 4 tbsp flour
- 1 pinch of salt
- 1/2 tsp baking powder
- 1 tbsp walnuts (roughly chopped)
Instructions
- Melt Butter and Combine Wet Ingredients: In a large microwave-safe mug, melt the butter in the microwave for 15-30 seconds until fully liquefied. Add the brown sugar, egg yolk, and milk. Mix well, then add the mashed banana and stir again to combine.
- Add Dry Ingredients and Mix: Add the flour, salt, baking powder, and chopped walnuts to the mug. Stir gently just until the ingredients are combined and no dry flour patches remain.
- Microwave the Mug Cake: Microwave the mixture on high power for 2 minutes. After the time has elapsed, check the cake’s doneness by inserting a toothpick or gently pressing the surface.
- Additional Cooking if Needed: If the mug cake appears slightly undercooked or raw in the center, microwave it for an additional 10 seconds. Repeat in short bursts as needed until fully cooked and fluffy.
- Serve and Enjoy: Allow the mug cake to cool slightly before eating. Enjoy this warm, moist banana bread mug cake straight from the mug for a quick and satisfying treat.
Notes
- Use ripe bananas for the best natural sweetness and moist texture.
- Microwave times may vary depending on wattage, so keep an eye on the cake’s texture.
- Walnuts can be omitted or replaced with other nuts or chocolate chips according to preference.
- Be careful not to overcook as it may become dry and rubbery.
- For a dairy-free version, substitute butter and milk with plant-based alternatives.
