Description
Delicious and guilt-free sugar-free chocolate covered almonds made with keto dark chocolate and roasted unsalted almonds. Perfect for a low-carb, diabetic-friendly snack that satisfies your sweet tooth while keeping it healthy and keto-compliant.
Ingredients
Almonds
- 2 cups whole roasted unsalted almonds
Chocolate Coating
- 2 – 8 oz keto dark chocolate baking bars
- 1 tsp powdered erythritol
- Sweetener for sprinkling on top (optional)
- Sea salt (to taste)
Instructions
- Prepare Baking Sheet: Cover a large baking sheet with parchment paper or foil to prevent sticking and for easy cleanup.
- Break Chocolate: Break the two keto dark chocolate bars into large chunks and place them into a small glass mixing bowl.
- Melt Chocolate: Microwave the chocolate in 30-second increments, stirring thoroughly after each to ensure even melting, until the chocolate is fully melted smooth.
- Combine Almonds and Sweetener: Add the roasted almonds and powdered erythritol to the melted chocolate and stir carefully until all the almonds are fully coated and the mixture is evenly combined.
- Form Clusters: Using a small cookie scoop or spoon, form small mounds of the chocolate-covered almonds onto the prepared baking sheet. Alternatively, create individual chocolate-covered almonds by placing them one by one on the sheet.
- Chill to Set: Place the baking sheet in the refrigerator for about 1 hour to allow the chocolate to harden and set properly.
- Store Properly: While refrigeration is not required, it is recommended to store the finished chocolate covered almonds in the fridge to prevent melting, keeping them fresh and firm.
