Ingredients
Yogurt Mixture
- 2 cups nonfat Greek yogurt (such as Fage, or dairy-free yogurt)
- 1/4 cup honey
- 3/4 teaspoon vanilla extract

- 1/2 cup fresh strawberries, sliced
Toppings
- 1/2 cup fresh strawberries, divided
- 1/4 cup whole raw pistachios
Instructions
- Prepare Baking Sheet: Line a small 13 x 9-inch baking sheet with parchment paper to prevent sticking and make removal easier.
- Blend Yogurt Mixture: In a food processor or blender, combine the yogurt, honey, 1/2 cup sliced strawberries, vanilla extract, and a pinch of salt. Blend on high speed for 10-15 seconds until the mixture is smooth and well combined.
- Spread Mixture: Pour the blended yogurt mixture onto the prepared baking sheet. Use an offset spatula or the back of a spoon to spread it evenly into a thin, uniform layer.
- Add Toppings: Scatter the remaining 1/2 cup fresh strawberries and whole raw pistachios evenly over the top of the spread yogurt mixture for added texture and flavor.
- Freeze to Set: Place the baking sheet in the freezer and chill for approximately 2 hours, or until the bark is completely set and firm.
- Serve: Once frozen solid, remove from the freezer and cut into 12 pieces. Enjoy immediately as a refreshing frozen snack.
