Ingredients
Cookie Dough
- 1/2 cup unsalted butter
- 1 cup granulated sugar
- 2 teaspoons lemon juice
- 1 teaspoon pure vanilla extract
- 2 cups all-purpose flour
- 2 teaspoons baking powder
- 3/4 cup diced strawberries
- 1 egg (optional, for wetter dough consistency)
- Food dye (optional)
- 1/2 cup white chocolate chips (for folding into dough)
Topping
- 1/4 cup white chocolate chips (to add on top after baking)
Instructions
- Preheat the oven: Preheat your oven to 350℉ to prepare for baking the cookies.
- Prepare baking sheet: Line a baking sheet with parchment paper or a silicone baking mat to prevent sticking.
- Cream butter and sugar: Using an electric mixer, beat the unsalted butter and granulated sugar together for 3 to 4 minutes until the mixture becomes light and fluffy.
- Add wet ingredients: Stir in the lemon juice, vanilla extract, egg if using, and any food dye, mixing until well combined.
- Mix dry ingredients: Add the flour and baking powder into the mixture and stir until a dough forms. Be careful to avoid overmixing to maintain a tender texture.
- Fold in strawberries and chocolate chips: Gently fold in the diced strawberries and half a cup of white chocolate chips ensuring they are evenly distributed throughout the dough.
- Work the dough: The dough will be thick and dry. Use your hands to knead and work the dough together to form a cohesive mass.
- Form dough balls: Scoop approximately two tablespoons of dough and roll it into compact balls. Place the dough balls on the prepared baking sheet. Repeat process with remaining dough.
- Bake the cookies: Bake in the preheated oven for 12 to 14 minutes until the bottoms of the cookies turn slightly golden.
- Cool on rack: Remove the baking sheet from the oven and transfer it onto a wire cooling rack.
- Add chocolate chip topping: Immediately after removing from the oven, press a few additional white chocolate chips onto the top of each cookie while still warm.
- Cool before serving: Allow the cookies to cool for at least ten minutes on the baking sheet before carefully removing them with a spatula to prevent breaking.
Notes
- The egg is optional; adding it makes the dough wetter and easier to work with.
- Use fresh diced strawberries for the best flavor and moisture.
- Do not overmix the dough once flour is added to avoid tough cookies.
- Handle the dough with care since it can be crumbly and dry.
- Adding food dye is optional for colorful cookies.
- Cooling the cookies on the baking sheet helps them set and prevents breaking.
