Description

This Strawberry Poke Cake is a delightful and refreshing dessert featuring a moist yellow cake infused with strawberry Jello. The cake is baked, poked with holes, and then filled with sweet strawberry gelatin, resulting in a flavorful and juicy bite every time. Topped with whipped cream and fresh strawberries, this cake is perfect for gatherings and celebrations.

Ingredients

Cake Ingredients

  • 1 box Yellow Cake Mix (14.25 oz) or a box of white cake mix
  • 1/2 cup Vegetable Oil (or amount specified on cake mix box)
  • 3 Eggs (or amount specified on cake mix box)
  • 1 1/2 cups Water (divided)

Filling and Topping

  • 1 package Strawberry Jello Mix (3 oz)
  • 8 ounces Whipped Cream (Cool Whip or similar)
  • Fresh strawberries for garnish

Instructions

  1. Prepare Cake Batter: Mix the cake batter according to the instructions on the box, combining the cake mix, vegetable oil, eggs, and half of the water as directed.
  2. Bake the Cake: Spread the batter evenly into a greased 9×13 inch baking pan. Bake the cake according to the time and temperature specified on the box instructions. Once baked, remove from the oven and let it cool for about 15 minutes.
  3. Make Strawberry Jello Mixture: In a medium saucepan, bring 1 cup of water to a boil. Once boiling, remove from heat and whisk in the strawberry Jello mix until fully dissolved. Add the remaining 1/2 cup of cold water and stir well.
  4. Poke Holes in Cake: Using the handle of a wooden spoon or a similar tool, poke holes about 1/2 inch apart all over the surface of the warm cake. This will allow the strawberry Jello mixture to seep into the cake.
  5. Add Jello to Cake: Carefully spoon the prepared strawberry Jello mixture into all the holes poked in the cake. Make sure to distribute the jello evenly so each bite is flavorful.
  6. Chill the Cake: Transfer the cake to the refrigerator and chill for at least 4 hours or overnight. This step allows the jello to set and the flavors to meld into the cake.
  7. Top with Whipped Cream and Garnish: When ready to serve, spread the entire container of whipped cream evenly over the top of the chilled cake. Slice into servings and garnish each piece with a fresh strawberry.

Notes

  • Use a fresh yellow or white cake mix according to your preference.
  • Ensure the cake is warm but not hot before poking holes to prevent cracking.
  • Chilling the cake overnight enhances the jello absorption and flavor.
  • Fresh strawberries add a beautiful garnish and extra freshness to the dessert.
  • This cake can be made a day ahead, making it ideal for parties.
