Ingredients

Dairy Mixture

  • 1 lb mascarpone
  • 1 lb quark
  • 3/4 cup icing sugar
  • 1 vanilla bean (seeds scraped)
  • juice of ½ lemon (or more to taste)
  • 1 1/2 cup heavy cream

Strawberry Sauce & Toppings

  • 1 lb strawberries
  • 2-4 tablespoons icing sugar (to taste)
  • 1/2 cup grated white chocolate


Instructions

  1. Whip mascarpone and quark mixture: In a large mixing bowl, combine the mascarpone, quark, 3/4 cup icing sugar, and the scraped seeds from the vanilla bean. Whip together until the mixture is smooth and creamy. Keep the empty vanilla bean for making vanilla sugar later if desired.
  2. Whip the heavy cream: In a separate bowl, whip the heavy cream until it forms stiff peaks.
  3. Combine cream and lemon: Gently fold the whipped cream into the mascarpone mixture to maintain its airy texture. Stir in the lemon juice gradually, tasting as you go to add the right amount of acidity.
  4. Puree the strawberries: Place the strawberries in a blender or food processor with 2 to 4 tablespoons icing sugar according to your preferred sweetness. Puree until smooth to create a fresh strawberry sauce.
  5. Grate white chocolate: Using a fine grater, grate the white chocolate and set aside for topping.
  6. Assemble the dessert: Spoon the mascarpone cream mixture into a large dessert bowl or divide evenly into eight individual serving cups. Pour the strawberry puree over the top. Poke a few times with a knife to allow the strawberry sauce to seep partially into the mascarpone mixture for marbled flavor.
  7. Add white chocolate topping: Sprinkle the grated white chocolate evenly over the assembled dessert.
