Instructions

  1. Prepare Strawberry Powder: Divide the freeze dried strawberries into two equal parts. Set one half aside to use later as pieces. Process the other half into a fine powder using a blender, food processor, or by placing them in a sealed bag and crushing with a rolling pin.
  2. Melt Butter and Marshmallows: In a medium saucepan over medium heat, melt the dairy free butter or coconut oil. Add the vegan marshmallows and stir continuously until fully melted and smooth.
  3. Add Flavorings: Stir in the strawberry powder, fresh lemon juice, and lemon zest into the melted marshmallow mixture. Mix well to combine the flavors evenly.
  4. Remove from Heat: Take the saucepan off the heat to prevent the mixture from burning or sticking as you add the dry ingredients.
  5. Combine with Rice Cereal and Strawberry Pieces: Fold in the rice crisp cereal along with the reserved freeze dried strawberry pieces, stirring until all the cereal is evenly coated.
