Description

Delight in these Strawberry Crisp Bars, a perfect balance of sweet, tart strawberries layered with a buttery oatmeal crust and crunchy topping. Ideal for any occasion, these bars feature fresh strawberries coated in a cinnamon-spiced sugar mixture, baked under a golden oat and coconut crust that adds texture and richness. Simple to prepare and perfect for serving warm or chilled, these bars are a crowd-pleasing dessert or snack.

Ingredients

Fruit Filling

  • 5 cups fresh strawberries, sliced
  • ½ cup sugar
  • ½ teaspoon cinnamon
  • ½ teaspoon salt
  • 2 tablespoons cornstarch

Crust and Topping

  • 1 ½ cups old fashioned oatmeal
  • 1 cup sweetened coconut
  • ¾ cup flour
  • ⅔ cup brown sugar
  • 1 cup butter, melted

Instructions

  1. Preheat the oven: Set your oven to 400ºF and spray a 9-10 inch baking pan with cooking spray to prevent sticking.
  2. Prepare the strawberry filling: In a large bowl, combine the sliced strawberries with sugar, cinnamon, salt, and cornstarch. Mix well to coat the berries evenly. Let this mixture sit on the counter while you prepare the crust to allow flavors to blend and juices to release.
  3. Mix the crust and topping: In a separate bowl, stir together the old fashioned oatmeal, sweetened coconut, flour, brown sugar, and melted butter until fully combined into a crumbly mixture.
  4. Assemble the bars: Spread half of the oat mixture evenly over the bottom of the prepared baking pan, pressing lightly to form a crust. Then pour the strawberry mixture on top, spreading evenly. Finally, evenly crumble the remaining oat mixture over the strawberries to form the topping.
  5. Bake the bars: Place the pan in the preheated oven and bake for 30 minutes, or until the crust is golden brown and the strawberry filling is bubbly.
  6. Cool and serve: Remove the bars from the oven and allow them to cool completely. You can serve them warm or refrigerate to firm up before cutting into bars.

Notes

  • For firmer bars, refrigerate after baking and before cutting.
  • These bars keep well in the refrigerator for up to 4 days.
  • Use fresh, ripe strawberries for the best flavor and texture.
  • Gluten-free flour can be substituted to make this recipe gluten-free.
  • Sweetened coconut adds a tropical flavor, but unsweetened coconut can be used for a less sweet version.
