Ingredients
Stewed Apples
- 2 kg apples (4.5 lbs), peeled, cored, and coarsely processed
- 150 g granulated sugar (5.5 oz / 3/4 cup)
- 2 teaspoons ground cinnamon
- 1/4 teaspoon ground cloves (optional)
Cake Batter
- 4 large eggs, room temperature
- 200 g granulated sugar (7 oz / 1 cup)
- 175 ml vegetable oil (6 oz / 3/4 cup), room temperature
- 250 g all-purpose flour (9 oz / 2 cups + 1 tablespoon)
- 2 tablespoons baking powder
- 175 ml milk (6 oz / 3/4 cup), room temperature
- Icing sugar for dusting
Instructions
- Prepare the Stewed Apples: Peel, core, and coarsely process the apples using a food processor or by grating. This should result in roughly chopped apples ready for cooking.
- Cook the Apples: In a wide pan, combine the processed apples, granulated sugar, ground cinnamon, and ground cloves (if using). Cook gently over medium-low heat, stirring occasionally, until the apples are soft and most of the liquid has evaporated. This takes about 15 minutes but may vary depending on the juiciness of the apples. Once done, remove from heat and allow to cool.
- Preheat Oven and Prepare Tray: Preheat your oven to 350°F (180°C). Line a baking tray with parchment paper to prevent sticking.
- Beat the Eggs and Sugar: In a large mixing bowl, beat the eggs and 200 g granulated sugar together until pale and frothy. Gradually incorporate the vegetable oil to create a smooth mixture.
- Combine Dry Ingredients: In a separate bowl, whisk together the all-purpose flour and baking powder.
- Mix Batter: Alternately add the flour mixture and milk to the egg mixture, starting and ending with the flour. Mix gently until the batter is runny and homogeneous.
- First Bake: Pour half of the batter into the prepared baking tray, spreading evenly. Bake in the preheated oven for about 10 minutes or until the top is lightly golden. If your tray is shallow, consider using a baking frame to contain the batter.
- Add Apple Layer: Remove the partially baked cake from the oven. Spread the cooled stewed apples evenly over the baked batter layer, smoothing the surface carefully without pressing down.
- Top with Remaining Batter and Bake: Pour the remaining batter gently over the apple layer and level lightly. Return the cake to the oven and bake for approximately 40 minutes or until the cake is golden brown and a skewer inserted in the batter comes out clean.
- Cool and Serve: Remove the cake from the oven and allow it to cool completely in the tray. Once cooled, slice into servings and dust liberally with icing sugar before serving.
Notes
- Using a food processor to coarsely chop the apples speeds up preparation compared to grating by hand.
- If your baking tray is shallow, using a baking frame helps keep the batter contained and creates even layers.
- The apple filling can be customized by adding other spices such as nutmeg or allspice according to taste.
- This cake is best enjoyed on the day of baking or within 2 days when stored in an airtight container.
