Ingredients
- For the Chicken and Vegetables:
4 boneless, skinless chicken thighs (or breasts)
1 red bell pepper, sliced
1 yellow onion, sliced
2 tablespoons olive oil
2 teaspoons ground cumin
1 teaspoon ground paprika
1 teaspoon dried oregano
1/2 teaspoon garlic powder
Salt and pepper, to taste
For the Feta Tzatziki Sauce:
1/2 cup plain Greek yogurt
1/4 cup crumbled feta cheese
1 tablespoon olive oil
1 tablespoon lemon juice
1 small cucumber, grated and excess water squeezed out
1 clove garlic, minced
Salt and pepper, to taste
Optional for Serving:
Pita bread or flatbreads
Fresh parsley, chopped (for garnish)
Extra lemon wedges
Instructions
Preheat the oven to 400°F (200°C). Line a large baking sheet with parchment paper for easy cleanup.
- In a small bowl, combine olive oil, cumin, paprika, oregano, garlic powder, salt, and pepper. Toss the chicken thighs (or breasts) in the spice mixture until evenly coated. Arrange the chicken on one side of the baking sheet.
- Toss the sliced bell pepper and onion with olive oil, salt, and pepper. Spread the vegetables on the other side of the baking sheet. Roast for 25-30 minutes, flipping halfway through, until the chicken reaches an internal temperature of 165°F (74°C) and the vegetables are tender.
- While the chicken and vegetables are roasting, prepare the feta tzatziki sauce by combining Greek yogurt, crumbled feta, olive oil, lemon juice, grated cucumber, and minced garlic in a bowl. Season with salt and pepper to taste. Set aside.
- Once the chicken and vegetables are cooked, remove from the oven. Let the chicken rest for a few minutes before slicing it into strips.
- Serve the chicken and vegetables in pita bread or flatbreads, drizzling the feta tzatziki sauce on top. Garnish with fresh parsley and additional lemon wedges, if desired.

- For a vegetarian option, swap the chicken for roasted chickpeas or tofu.
- Make it spicier by adding cayenne pepper or drizzle sriracha over the chicken before serving.
- This dish is also great served with rice or quinoa if you prefer not to use pita bread.
