Instructions

  1. Preheat the Oven: Preheat your oven to 400°F to prepare for baking the toffee cookies.
  2. Prepare the Pan: Spray a 12-cavity muffin pan thoroughly with nonstick spray or line with cupcake liners and then spray. This step is essential to prevent sticking as the toffee mixture is very sticky.
  3. Place Crackers: Place one Ritz cracker into each muffin cavity evenly to form the base of your toffee cookie.
  4. Melt Butter: In a medium saucepan set over medium heat, melt the salted butter completely.
  5. Add Brown Sugar & Boil: Stir in the brown sugar and continue stirring as the mixture dissolves and reaches a rolling boil. Allow it to cook for about 3 minutes until it thickens and turns a deep dark brown. Using a candy thermometer, check that the temperature reaches approximately 290°F for ideal toffee consistency.
  6. Top Crackers with Toffee: Carefully spoon about 1 tablespoon of the hot toffee mixture onto each Ritz cracker, distributing evenly.
  7. Bake: Bake the tray in the preheated oven for 4 minutes to set the toffee onto the crackers.
  8. Add Chocolate: Remove the pan from the oven and immediately sprinkle 2 teaspoons of mini semi-sweet chocolate chips on top of each hot toffee cookie, allowing the chocolate to soften and melt.
  9. Spread Chocolate and Add Sprinkles: Use the back of a spoon to spread the melted chocolate smoothly over each cookie; immediately add sprinkles if desired for decoration.
