Instructions
- Preheat the Oven: Preheat your oven to 400°F to prepare for baking the toffee cookies.
- Prepare the Pan: Spray a 12-cavity muffin pan thoroughly with nonstick spray or line with cupcake liners and then spray. This step is essential to prevent sticking as the toffee mixture is very sticky.
- Place Crackers: Place one Ritz cracker into each muffin cavity evenly to form the base of your toffee cookie.
- Melt Butter: In a medium saucepan set over medium heat, melt the salted butter completely.
- Add Brown Sugar & Boil: Stir in the brown sugar and continue stirring as the mixture dissolves and reaches a rolling boil. Allow it to cook for about 3 minutes until it thickens and turns a deep dark brown. Using a candy thermometer, check that the temperature reaches approximately 290°F for ideal toffee consistency.
- Top Crackers with Toffee: Carefully spoon about 1 tablespoon of the hot toffee mixture onto each Ritz cracker, distributing evenly.
- Bake: Bake the tray in the preheated oven for 4 minutes to set the toffee onto the crackers.
- Add Chocolate: Remove the pan from the oven and immediately sprinkle 2 teaspoons of mini semi-sweet chocolate chips on top of each hot toffee cookie, allowing the chocolate to soften and melt.
- Spread Chocolate and Add Sprinkles: Use the back of a spoon to spread the melted chocolate smoothly over each cookie; immediately add sprinkles if desired for decoration.
- Chill to Set: Place the muffin pan in the refrigerator for 30 minutes to let the toffee harden and the chocolate set firmly.
