Description

Delightfully festive Red Velvet Cookie Bars featuring a moist red velvet base topped with creamy whipped cream cheese frosting and colorful red and green sprinkles. Perfect for holiday gatherings or anytime you crave a rich, chocolaty treat with a twist on classic red velvet flavor.

Ingredients

Red Velvet Cookie Bars

  • 1 (15.25 ounce) package red velvet cake mix
  • 1/3 cup vegetable oil
  • 2 large eggs

Topping

  • 1 container (approximately 8 ounces) whipped cream cheese frosting
  • Red and green sprinkles, for decoration

Instructions

  1. Preheat and Prepare Pan: Preheat your oven to 350°F (175°C). Line a 9×13-inch baking pan with parchment paper and lightly spray with nonstick cooking spray to ensure easy removal of the cookie bars.
  2. Mix Ingredients: In a mixing bowl, stir together the red velvet cake mix, vegetable oil, and eggs until the mixture is smooth and fully combined with no lumps.
  3. Press into Pan: Evenly press the cookie dough mixture into the prepared baking pan, spreading it out to the edges and smoothing the top for an even layer.
  4. Bake: Place the pan in the preheated oven and bake for 20 to 25 minutes, or until the edges turn a golden brown color and a toothpick inserted near the center comes out mostly clean.
  5. Cool Completely: Remove the pan from the oven and allow the cookie bars to cool completely in the pan to room temperature. This step prevents the frosting from melting.
  6. Add Frosting and Decorate: Once cooled, remove the cookie bars from the pan using the parchment paper. Spread the whipped cream cheese frosting evenly over the top.
  7. Sprinkle and Serve: Decorate the frosted bars with red and green sprinkles to add festive color. Cut into squares and serve.

Notes

  • Make sure the cookie bars are completely cooled before frosting to prevent the icing from melting.
  • You can substitute homemade cream cheese frosting if preferred.
  • Store leftover cookie bars in an airtight container at room temperature for up to 3 days or refrigerate for up to a week.
  • For a gluten-free version, use a gluten-free red velvet cake mix.
