Ingredients
Base Ingredients
- 3 tbsp butter
- 1 10 oz bag mini marshmallows
- ½ cup pure canned pumpkin purée
- 1 tsp pumpkin pie spice
- Pinch of salt
- 6 cups Rice Krispies cereal
Glaze Ingredients
- ¾ cup powdered sugar
- 1 teaspoon maple syrup
- 2 tbsp milk (add more to reach desired consistency)
- ½ tsp ground cinnamon
- Pinch of salt
Additional
- Nonstick cooking spray or butter for greasing donut pan or hands
Instructions
- Create the Pumpkin Base: Melt the butter in a large saucepan over medium-low heat, then add the mini marshmallows and stir continuously until they are nearly melted and smooth.
- Mix in Pumpkin and Spices: Stir in the pure canned pumpkin purée, pumpkin pie spice, and a pinch of salt until the mixture is completely smooth and well combined.
- Combine with Rice Krispies: Remove the saucepan from the heat and quickly fold in the Rice Krispies cereal until every piece is evenly coated with the pumpkin marshmallow mixture.
- Form the Donuts: Lightly grease a donut pan with nonstick cooking spray or butter. Firmly press the warm Rice Krispies mixture into the donut molds to shape the donuts. If shaping by hand, grease your hands and form donut shapes.
- Cool Completely: Allow the donuts to cool fully and set before removing them carefully from the pan to maintain their shape.
- Prepare the Glaze: In a small bowl, whisk together the powdered sugar, maple syrup, milk, ground cinnamon, and a pinch of salt until the glaze is smooth and lump-free. Add more milk as needed for your desired consistency.
- Glaze the Donuts: Dip the tops of the cooled donuts into the glaze or drizzle the glaze over them using a spoon. Place the donuts on a rack or plate to allow the glaze to set.
- Let Glaze Set: Allow the glaze to set for at least 15 minutes before serving to ensure a perfect finish and easy handling.
Notes
- You can adjust the thickness of the glaze by adding more or less milk to suit your preference.
- Pressing the mixture firmly into the molds helps the donuts hold their shape and prevents crumbling.
- These donuts are best enjoyed fresh but can be stored in an airtight container for 1-2 days.
- For a vegan version, substitute butter with vegan margarine and marshmallows with vegan marshmallows.
- If you don’t have a donut pan, you can shape the mixture manually into rounds and slightly flatten them.
