Description

These delightful Pumpkin Hand Pies combine the warm flavors of spiced pumpkin and tender cooked apples encased in flaky pie dough. Perfectly portioned for individual servings, this recipe offers a comforting fall dessert that’s easy to make and customizable with optional add-ins like raisins or nuts. Baked to a golden crisp and dusted with powdered sugar, these pies make for a cozy treat to enjoy with family and friends.

Ingredients

Filling

  • 2 medium granny smith apples, peeled, cored and diced into small pieces
  • 1/4 cup sugar
  • 2 tablespoons water
  • 1/2 cup pumpkin puree
  • 1 tablespoon maple syrup
  • 1 tablespoon cornstarch
  • 1/2 teaspoon pumpkin pie spice

Dough

  • 4 pie dough sheets (homemade or store bought)
  • Flour, for dusting dough

Topping

  • 2 tablespoons powdered sugar

Instructions

  1. Cook the apples: Place the diced apples, sugar, and 2 tablespoons of water in a medium saucepan. Cover with a lid and cook over medium heat for about 5 minutes or until the apples become soft. Remove from heat and set aside to cool slightly.
  2. Mix pumpkin and spices: Gently stir the pumpkin puree and pumpkin pie spice into the softened apples, combining the flavors evenly.
  3. Prepare filling binding: In a small bowl, whisk together the maple syrup and cornstarch until the mixture is creamy and smooth. Stir this into the pumpkin and apple filling to help thicken it.
  4. Prepare the dough: On a surface lightly dusted with flour, unroll the pie dough sheets. Use a cookie cutter to cut out your desired shapes. Take half of the cut shapes and roll them slightly larger with a rolling pin to create the tops of the pies.
  5. Assemble the pies: Spoon the pumpkin-apple filling onto the unrolled dough shapes, leaving about a 1/3 inch border around the edges. Place the slightly larger dough shapes on top and seal the edges firmly using a fork. Poke a small steam hole in the center of each pie with the fork.
  6. Chill before baking: Place the assembled hand pies on a baking sheet and refrigerate for 30 minutes to let the dough firm up.
  7. Bake the pies: Preheat the oven to 400 degrees Fahrenheit. Bake the pies for 20 minutes or until they turn golden brown.
  8. Serve: Allow the pies to cool slightly on a wire rack, then dust with powdered sugar before serving for a sweet finishing touch.

Notes

  • This recipe is highly flexible: consider adding raisins, cranberries, or finely chopped nuts into the filling for added texture and flavor.
  • Use refrigerated pie dough or homemade dough depending on your preference or convenience.
  • Make sure to seal the edges well to prevent the filling from leaking during baking.
  • Allow pies to cool slightly so the filling sets and is easier to eat.
