Description

Pineapple Delight is a refreshing no-bake style dessert featuring a buttery graham cracker crust topped with a smooth, sweetened butter and egg filling, layered with whipped topping mixed with crushed pineapple for a light and tropical finish. Perfect for family gatherings and summer parties, this easy-to-make dessert combines crunchy, creamy, and fruity textures in every bite.

Ingredients

Crust

  • 2 1/2 cups graham cracker crumbs
  • 1/2 cup butter, melted

Filling

  • 1/2 cup butter, softened
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 2 cups powdered sugar

Topping

  • 1 (20-ounce) can crushed pineapple, drained well
  • 1 (8-ounce) container whipped topping (or 2 to 3 cups homemade whipped cream)

Instructions

  1. Prepare the crust: Grease an 8×8-inch pan and preheat the oven to 325 degrees F. In a medium bowl, combine the graham cracker crumbs and melted butter. Stir well to combine.
  2. Form the crust: Transfer the graham cracker mixture to the prepared pan and press down firmly to compact the crumbs into an even layer.
  3. Bake crust: Bake the crust for 10 minutes, then remove from oven and allow it to cool completely to set properly before adding the filling.
  4. Make the filling: Using an electric mixer, beat the softened butter, eggs, and vanilla extract together until smooth and creamy. Gradually add the powdered sugar and continue beating until fully combined and fluffy.
  5. Bake filling: Spread the filling evenly over the cooled graham cracker crust. Bake for 15 minutes at 325 degrees F. Remove from oven and let cool completely.
  6. Prepare topping: Stir together the drained crushed pineapple and whipped topping (or homemade whipped cream) until well combined.
  7. Assemble dessert: Spread the pineapple and whipped topping mixture evenly over the cooled filling layer. Cover the pan and refrigerate the dessert until ready to serve, allowing the layers to set and chill.

Notes

  • Ensure the crushed pineapple is well drained to prevent the topping from becoming too watery.
  • Use homemade whipped cream for a fresher taste if preferred over store-bought whipped topping.
  • The dessert is best served well chilled for optimal texture and flavor.
  • This recipe can be doubled for larger gatherings by using a 9×13-inch pan and adjusting baking times slightly.
  • For a nuttier crust, lightly toast the graham cracker crumbs before mixing with butter.
