Description
This Pear Clafoutis is a classic French dessert featuring ripe pears baked in a light, custard-like batter. It’s easy to make, with a delicate balance of sweetness and subtle vanilla and lemon flavors, perfect for a cozy dessert or brunch treat.
Ingredients
Clafoutis Batter
- 2 eggs
- 3 tbsp sugar
- 2/3 cup whole milk
- 1/3 cup all purpose flour (plain flour)
- 1 tsp vanilla extract
- 1/2 tsp lemon zest
- 1 pinch salt
Fruit and Preparation
- 2 pears (small-medium, just ripe)
- 1/2 tbsp butter (approx, to grease skillet)
Instructions
- Preheat and Prepare Skillet: Preheat the oven to 375°F (190°C). Lightly grease an 8-inch cast iron skillet or a baking dish of similar size with approximately 1/2 tablespoon of butter to prevent sticking.
- Make the Batter: In a bowl or mixer, whisk together the 2 eggs and 3 tablespoons of sugar until well combined. Add 2/3 cup whole milk, 1/3 cup all purpose flour, 1 teaspoon vanilla extract, 1/2 teaspoon lemon zest, and a pinch of salt. Continue whisking until the batter is smooth and free of lumps.
- Prepare the Pears: Peel the pears and cut them in half. Remove the core from each half, then slice into thin pieces. Arrange the pear slices evenly in the bottom of the greased skillet, fanning them out slightly for an attractive presentation.
- Combine and Bake: Carefully pour the prepared batter over the arranged pears, ensuring even coverage. Place the skillet in the preheated oven and bake for approximately 35 minutes, or until the edges are lightly browned and the custard is set.
- Cool and Serve: Remove the clafoutis from the oven and allow it to cool for a few minutes. The clafoutis will puff up in the oven and gently collapse as it cools. Optionally, sprinkle with confectioners sugar before serving for a touch of sweetness and presentation.
Notes
- Use ripe but firm pears to maintain shape during baking.
- You can substitute pears with other fruits like cherries or apples if desired.
- Ensure the batter is smooth to avoid lumps in the finished dessert.
- Serve warm or at room temperature for best flavor.
- The dessert can be dusted with powdered sugar or served with a dollop of whipped cream or vanilla ice cream.
