Description
These Peanut Butter Jelly Cookies combine the classic flavors of peanut butter and jelly in a soft, chewy cookie. Perfectly balanced with creamy peanut butter, sweet jelly, and a hint of vanilla, these cookies are an irresistible treat that resembles the beloved sandwich in cookie form.
Ingredients
Cookie Dough
- 1 ½ cups creamy peanut butter
- 1 cup butter (salted or unsalted)
- ⅔ cup white sugar
- ⅔ cup brown sugar
- 2 eggs
- 2 teaspoons vanilla extract
- 2 ¾ cups all-purpose flour
- 2 teaspoons baking soda
- 1 teaspoon salt
Filling
- ¾ cup grape jelly (or your favorite flavor)
Instructions
- Preheat Oven: Preheat your oven to 375˚F (190˚C) to ensure it reaches the right temperature for baking your cookies evenly.
- Mix Wet Ingredients: In a large bowl, combine the creamy peanut butter, butter, white sugar, and brown sugar. Beat the mixture until it is light and fluffy, then add in the eggs and vanilla extract, mixing well to integrate everything smoothly.
- Add Dry Ingredients: Stir in the all-purpose flour, baking soda, and salt to the wet mixture. Continue mixing until everything is combined and the dough becomes soft but not sticky.
- Shape Cookies: Measure 2 tablespoons of dough and roll it into a ball. Repeat this process for the entire batch of dough. Place each dough ball on a cookie sheet, spacing them about 2 inches apart to allow for spreading.
- Bake: Bake the cookies in the preheated oven for 9-11 minutes until they are set.
- Create Indention and Add Jelly: Immediately after removing the cookies from the oven, use the back of a teaspoon to gently press an indention into the center of each cookie. Spoon about 1 teaspoon of grape jelly (or your preferred flavor) into each indention while the cookies are still warm.
Notes
- The choice of jelly flavor can be customized to your liking; grape is traditional, but strawberry or raspberry also work well.
- Ensure the dough is soft but not sticky; if too sticky, chill it for 15-20 minutes before rolling.
- Use room temperature butter for easier mixing and better texture.
- Store cookies in an airtight container to maintain freshness for up to a week.
- For a nut-free version, substitute peanut butter with sunflower seed butter and ensure the jelly does not contain nuts.
