Description
This Peanut Butter Bread is a moist and flavorful homemade loaf made with creamy peanut butter, brown and white sugars, and vanilla. It’s a perfect treat for peanut butter lovers, offering a soft texture and subtle sweetness baked into every slice.
Ingredients
Wet Ingredients
- 1/2 cup creamy peanut butter
- 1 cup whole milk
- 1 large egg
- 1 teaspoon vanilla extract
Dry Ingredients
- 2 cups all-purpose flour
- 2 teaspoons baking powder
- 1 teaspoon salt
Sugars
- 1/4 cup brown sugar (packed)
- 1/4 cup white sugar
Instructions
- Preheat: Preheat your oven to 350 degrees F (175 degrees C). Grease a 9×4-inch loaf pan with baking spray to prevent sticking and set it aside.
- Microwave Peanut Butter: Place the peanut butter in a microwave-safe bowl and heat it for 35 to 50 seconds until softened. Stir well to ensure it is smooth and easily mixable.
- Whisk Wet Ingredients: In a large mixing bowl, whisk together the softened peanut butter, whole milk, brown sugar, white sugar, and the egg until the mixture becomes smooth and homogenous.
- Add Vanilla: Stir in the vanilla extract thoroughly into the wet ingredient mixture for added flavor.
- Mix Dry Ingredients: In a separate bowl, sift together the all-purpose flour, baking powder, and salt to combine evenly and remove any lumps.
- Combine Mixtures: Gradually fold the dry flour mixture into the wet mixture. Use a whisk or spatula to combine until just incorporated; avoid overmixing to keep the bread tender.
- Transfer to Pan: Pour the batter into the prepared loaf pan, smoothing the top with a spatula to ensure even cooking.
- Bake: Place the loaf pan in the preheated oven and bake for 50 to 55 minutes. Check doneness by inserting a toothpick into the center; it should come out clean or with a few crumbs attached but no wet batter.
Notes
- Do not overmix the batter once the dry ingredients are added; this ensures a soft and tender bread texture.
- If you prefer a crunchier texture, add chopped peanuts to the batter before baking.
- Allow the bread to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely to prevent sogginess.
- This bread stores well in an airtight container at room temperature for up to 3 days or can be frozen for longer storage.
