Description

This Passionfruit Slice is a delightful and tangy dessert featuring a buttery golden base topped with a luscious passionfruit icing. Perfect for a refreshing treat or a sweet addition to any gathering, this slice combines the tropical flavor of passionfruit with a soft, melt-in-your-mouth cookie base.

Ingredients

Base:

  • 1 1/2 cups all-purpose flour
  • 3/4 cup granulated sugar
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 125 g unsalted butter, melted
  • 1 large egg
  • 1 teaspoon vanilla extract

Icing:

  • 1 1/2 cups powdered sugar
  • 23 tablespoons passionfruit pulp (fresh or canned)
  • 12 teaspoons lemon juice (optional)

Instructions

  1. Preheat oven: Preheat your oven to 180°C (350°F) and line an 8-inch (20 cm) square baking pan with parchment paper to prevent sticking and ensure even baking.
  2. Mix dry ingredients: In a medium-sized bowl, combine the all-purpose flour, granulated sugar, baking powder, and salt, stirring to blend evenly.
  3. Add wet ingredients and combine: Pour in the melted unsalted butter, crack in the large egg, and add the vanilla extract. Mix thoroughly until you achieve a smooth, uniform batter.
  4. Prepare the base: Pour and spread the batter evenly into the prepared baking pan, smoothing the surface with a spatula for an even layer.
  5. Bake the base: Place the pan in the preheated oven and bake for 20 to 25 minutes, or until the base is lightly golden and set to the touch.
  6. Cool the base: Remove the pan from the oven and allow the baked base to cool completely in the pan to prevent the icing from melting.
  7. Prepare passionfruit icing: In a clean bowl, mix together the powdered sugar with 2 to 3 tablespoons of passionfruit pulp. Optionally, add 1 to 2 teaspoons of lemon juice to enhance the tartness. Stir until you get a thick and spreadable consistency.
  8. Apply the icing: Spread the passionfruit icing evenly over the cooled base, smoothing the top with a spatula for an even layer.
  9. Set and slice: Allow the icing to set completely, then slice into 12 squares for serving.

Notes

  • Use fresh passionfruit pulp if available for the best flavor, but canned pulp works well too.
  • The lemon juice in the icing is optional but adds a bright, tangy note that complements the passionfruit.
  • Ensure the base is fully cooled before icing to prevent the glaze from melting and running.
  • Store slices in an airtight container in the refrigerator to keep the icing firm.
