Ingredients
Base:
- 1 1/2 cups all-purpose flour
- 3/4 cup granulated sugar
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 125 g unsalted butter, melted
- 1 large egg
- 1 teaspoon vanilla extract
Icing:
- 1 1/2 cups powdered sugar
- 2–3 tablespoons passionfruit pulp (fresh or canned)
- 1–2 teaspoons lemon juice (optional)
Instructions
- Preheat oven: Preheat your oven to 180°C (350°F) and line an 8-inch (20 cm) square baking pan with parchment paper to prevent sticking and ensure even baking.
- Mix dry ingredients: In a medium-sized bowl, combine the all-purpose flour, granulated sugar, baking powder, and salt, stirring to blend evenly.
- Add wet ingredients and combine: Pour in the melted unsalted butter, crack in the large egg, and add the vanilla extract. Mix thoroughly until you achieve a smooth, uniform batter.
- Prepare the base: Pour and spread the batter evenly into the prepared baking pan, smoothing the surface with a spatula for an even layer.
- Bake the base: Place the pan in the preheated oven and bake for 20 to 25 minutes, or until the base is lightly golden and set to the touch.
- Cool the base: Remove the pan from the oven and allow the baked base to cool completely in the pan to prevent the icing from melting.
- Prepare passionfruit icing: In a clean bowl, mix together the powdered sugar with 2 to 3 tablespoons of passionfruit pulp. Optionally, add 1 to 2 teaspoons of lemon juice to enhance the tartness. Stir until you get a thick and spreadable consistency.
- Apply the icing: Spread the passionfruit icing evenly over the cooled base, smoothing the top with a spatula for an even layer.
- Set and slice: Allow the icing to set completely, then slice into 12 squares for serving.
