Description

Delight in the rich and decadent Oreo Cheesecake Brownies that combine a fudgy chocolate brownie base with a creamy Oreo-studded cheesecake layer. Perfectly baked to achieve a glossy brownie base topped with a smooth, set cheesecake, and finished with crunchy Oreo pieces for added texture and flavor. This indulgent dessert serves 16 and is ideal for gatherings or treating yourself to a luscious sweet treat.

Ingredients

Brownie Layer

  • 2 large eggs (ideally at room temperature)
  • ½ cup flavorless oil (such as canola oil or sunflower oil)
  • 2 tbsp water (tap water)
  • 1 tsp vanilla extract
  • ⅔ cup all purpose flour (or plain flour)
  • ⅔ cup cocoa powder (Dutch processed)
  • ½ cup granulated sugar (or caster sugar)
  • ½ cup powdered sugar
  • ½ tsp salt
  • 4 oz cream cheese baking chips (or white chocolate chips)

Cheesecake Layer

  • 8 oz soft spreadable cream cheese (full fat cream cheese from a tub)
  • ¼ cup granulated sugar (or caster sugar)
  • 1 large egg (ideally at room temperature)
  • 1 tsp vanilla extract
  • 2 tbsp sour cream
  • 10 Oreo cookies (standard stuffed, broken into pieces)

Instructions

  1. Prepare baking pan and oven: Line an 8″ square baking pan with parchment paper and preheat your oven to 325℉ (165°C, 145°C fan).
  2. Mix wet ingredients for brownie layer: In a large mixing bowl, whisk together 2 large eggs, ½ cup flavorless oil, 2 tbsp water, and 1 tsp vanilla extract until emulsified, about one minute.
  3. Add dry ingredients to brownie mixture: Sift together ⅔ cup flour, ⅔ cup cocoa powder, ½ tsp salt, ½ cup granulated sugar, and ½ cup powdered sugar into the wet ingredients. Stir with a spatula just until combined into a thick, glossy batter.
  4. Incorporate cream cheese chips: Fold in 4 oz cream cheese baking chips evenly throughout the brownie batter.
  5. Spread brownie batter: Pour batter into the prepared pan and gently spread it evenly into the edges and corners. Set aside while preparing the cheesecake layer.
  6. Prepare cheesecake filling: In a large bowl, whisk 8 oz soft spreadable cream cheese and ¼ cup sugar until smooth, about two minutes.
  7. Add remaining ingredients to cheesecake batter: Whisk in 1 large egg and 1 tsp vanilla extract, then fold in 2 tbsp sour cream.
  8. Add crushed Oreos: Crush about 6 Oreo cookies (including filling) and fold gently into the cheesecake mixture using a spatula.
  9. Assemble layers: Pour the cheesecake filling over the brownie layer and spread gently to an even layer.
  10. Top with remaining Oreo pieces: Crumble the remaining 4 Oreos on top to create a crunchy finish.
  11. Bake: Place the pan in the center of the preheated oven and bake for 35-40 minutes, or until the cheesecake is set but not browned.
  12. Cool and chill: Remove from oven and allow to cool completely at room temperature, then chill thoroughly in the refrigerator before cutting into 16 servings and serving.

Notes

  • Using room temperature eggs helps create a smoother batter.
  • Ensure not to overmix the brownie batter to keep brownies fudgy.
  • Full-fat cream cheese yields the best flavor and texture for the cheesecake layer.
  • Chilling the brownies helps the cheesecake set properly and makes slicing easier.
  • You can substitute cream cheese baking chips with white chocolate chips, but the flavor will be different.
  • Line the baking pan with parchment paper overhang to easily lift out the brownies after baking.
