Perfectly crisp on the outside and chewy inside, these sophisticated French pastries offer a burst of citrus flavor balanced by luscious chocolate, ideal for special occasions or an indulgent treat.

Ingredients

Macaron Shells

  • 1 Orange (for zest)
  • 100 grams Egg Whites
  • 130 grams Powdered Sugar (icing sugar)
  • 140 grams Almond Flour
  • 90 grams Superfine Sugar (Caster Sugar)
  • 1/4 teaspoon Cream of Tartar
  • 1 teaspoon Vanilla Extract
  • 1/8 teaspoon Salt
  • Gel Food Colour (optional)

Orange Curd

  • 3 Egg Yolks
  • 3 tablespoons Orange Zest
  • 60 grams Orange Juice
  • 60 grams Caster Sugar
  • 1/8 teaspoon Salt
  • 60 grams Unsalted Butter

Dark Chocolate Ganache

  • 100 grams Dark Chocolate
  • 50 grams Cream

Instructions

  1. Prepare Orange Zest and Dry Mixture: Use a fine grater to zest one orange finely. In a food processor, combine almond flour, powdered sugar, and 2 tablespoons of the orange zest and pulse for 2 minutes to blend flavors.
  2. Sift Dry Ingredients: Sift the blended dry ingredients through a fine sieve into a bowl, discarding any large pieces, then set aside.
  3. Whip Egg Whites: In a mixer bowl, start beating the egg whites on low speed until bubbles form. Add cream of tartar, then increase to medium speed.
  4. Add Sugar and Flavorings: Gradually add caster sugar one tablespoon at a time, allowing it to dissolve fully before adding the next. Add salt and vanilla extract, increase speed to high, and whip until stiff peaks form.
  5. Fold Dry Ingredients: Gently fold half of the almond flour mixture into the egg whites, then fold in the rest, taking care to maintain the airy texture.
  6. Macaronnage Technique: Use a spatula to gently deflate the batter by spreading and gathering it until it flows off the spatula in a smooth ribbon.
  7. Pipe Macarons: Transfer batter to a piping bag with a round nozzle. Pipe 1.5-inch circles onto lined baking trays. Tap trays firmly on the work surface 3 times to remove air bubbles; pop visible bubbles with a toothpick.
  8. Rest Macarons: Allow the piped shells to rest at room temperature until their surfaces form a dry, matte texture, approximately 15 to 45 minutes.
  9. Bake Macarons: Preheat oven to 250°F (120°C). Bake shells for 20-25 minutes or until they can be peeled off baking paper cleanly. Cool completely on trays before removing.
  10. Make Orange Curd: Zest and juice the remaining orange. In a heatproof bowl over simmering water, whisk together orange zest, orange juice, egg yolks, sugar, and salt until thickened.
  11. Add Butter to Curd: Stir in unsalted butter until fully incorporated. Transfer to a container and chill until cooled.
  12. Prepare Ganache: In a microwave-safe bowl, heat dark chocolate and cream for 20 seconds on high. Stir; repeat heating in 10-second bursts until smooth and fully melted.
  13. Assemble Macarons: Pair macaron shells by size. Optionally decorate shells with melted chocolate drizzle and edible decorations. Pipe a circle of ganache on one shell, fill with orange curd, then sandwich with the matching shell.
  14. Storage: Store assembled macarons in an airtight container in the refrigerator for up to 1 day or freeze for up to 2 months. Let come to room temperature before serving.

Notes

  • Ensure egg whites are at room temperature for better volume.
  • Resting macarons before baking is crucial for developing the characteristic ‘feet’.
  • Use unsalted butter for curd to control salt levels precisely.
  • For best texture, avoid overfolding macaron batter.
  • Bring refrigerated macarons to room temperature before serving to enhance flavor and texture.
  • Gel food coloring is optional, used if you want colored macaron shells.
