Instructions
- Preheat the Oven: Set your oven to 350º F (175º C) to ensure it reaches the right temperature while you prepare the pudding mixture.
- Prepare the Custard Mixture: In a large bowl, beat the 6 eggs thoroughly. Add ¼ cup sugar and whisk until combined and slightly frothy. Slowly pour in 1 cup milk and 1 cup half and half, stirring to mix evenly. Fold in the bread cubes and chopped dark chocolate, making sure everything is well incorporated.
- Add Marmalade Base: Spoon about one teaspoon of orange marmalade into the bottom of each individual ramekin. This adds a sweet, citrus layer at the base.
- Fill the Ramekins: Pour the bread, chocolate, and custard mixture over the marmalade in each ramekin, filling them up to just below the rim.
- Prepare Bain Marie: Place all the filled ramekins into a deep baking tray. Carefully pour boiling water into the tray until it reaches halfway up the sides of the ramekins. This water bath helps the pudding cook evenly and gently.
- Bake the Puddings: Transfer the tray to the preheated oven and bake for 35 to 40 minutes, or until the custard is set but still soft in the center.
- Cool and Serve: Remove the ramekins from the water bath and let them cool for a few minutes. Serve warm, reminding guests the pudding is freshly baked and hot.
