  • 3 large eggs (separated)

  • 2 tablespoons orange liqueur (such as Grand Marnier or Cointreau; or additional orange juice)
  • 1/2 teaspoon pure almond extract
  • 1/2 teaspoon kosher salt
  • 1 cup firmly packed almond flour or almond meal (135 grams)
  • 1/3 cup finely ground polenta/cornmeal

Glaze

  • 1 cup powdered sugar
  • 1 1/2 tablespoons orange liqueur (or additional orange juice)
  • 1 tablespoon orange juice


Instructions

  1. Preheat: Preheat your oven to 300 degrees F. Generously coat a 9-inch round cake pan with nonstick spray and line the bottom with parchment paper to prevent sticking.
  2. Beat Egg Whites: In a medium bowl, beat the egg whites with an electric mixer until they hold stiff peaks. Be careful not to overbeat to avoid whites separating. Set aside.
  3. Zest Orange Sugar: In a large mixing bowl or stand mixer bowl, add the sugar. Zest the orange directly over the sugar and rub with your fingers until fragrant and lightly moist. Juice the orange and set aside for later use.
