Ingredients

Batter

  • 1 cup all-purpose flour
  • 2 large eggs
  • 1/2 cup whole milk
  • 1/2 cup water

Filling and Topping

  • 1 cup mixed berries (strawberries, blueberries, raspberries)
  • 1 cup Nutella
  • 1/2 tablespoon confectioners’ sugar (icing sugar)


Instructions

  1. Prepare the batter: In a large mixing bowl, whisk together the all-purpose flour and eggs until smooth. Gradually add the whole milk, water, melted butter, and salt, stirring to combine thoroughly.
  2. Blend for smoothness: Pour the batter into a blender and blend for 1 minute until the batter is silky and lump-free. This ensures perfectly smooth crepes.
  3. Heat the pan: Lightly grease a non-stick skillet with butter or oil and heat it over medium heat to prepare for cooking the crepes.
  4. Cook the crepes: Using a 1/4 cup measure, scoop batter onto the hot pan. Immediately tilt and rotate the pan in a circular motion to spread the batter evenly into a thin layer.
  5. First side cooking: Let the crepe cook for about 2 minutes until the edges lift slightly and the bottom turns a light golden brown color.
  6. Flip the crepe: Carefully loosen the edges with a spatula, flip the crepe, and cook the other side for 1–2 minutes until golden brown, then slide the crepe onto a plate.
  7. Repeat cooking: Repeat the cooking process for the remaining batter, greasing the pan lightly as needed.
  8. Assemble the crepes: Spread a generous amount of mixed berries on half of each crepe. Drizzle with Nutella over the berries, then fold the crepe into quarters.
  9. Garnish and serve: Drizzle extra Nutella on top of the folded crepes and sprinkle with confectioners’ sugar. Serve immediately for the best taste and texture.
