Description

Ingredients

  1. 1 1/2 cups rolled oats
  2. 1/2 cup nut butter (peanut, almond, or cashew)
  3. 1/4 cup honey or maple syrup
  4. 1/4 cup chopped nuts (almonds, walnuts, or pecans)
  5. 1/4 cup seeds (chia, sunflower, or pumpkin)
  6. 1/4 cup mini chocolate chips or dried fruit (optional)
  7. 1 teaspoon vanilla extract
  8. Pinch of salt

Instructions

In a large bowl, combine rolled oats, chopped nuts, seeds, chocolate chips or dried fruit, and salt.

  1. In a small saucepan over low heat, warm nut butter and honey or maple syrup until smooth and combined. Remove from heat and stir in vanilla extract.
  2. Pour the wet mixture over the dry ingredients and stir until everything is well coated and sticky.
  3. Line a baking dish or pan with parchment paper and press the mixture firmly into an even layer.
  4. Refrigerate for at least 1 hour or until firm.
  5. Once set, cut into bite-sized squares or bars.
