Ingredients
1 cup couscous

Instructions
- In a medium saucepan, bring the broth (or water) to a boil over medium-high heat. Add the olive oil, cumin, coriander, cinnamon, turmeric (if using), salt, and pepper. Stir to combine.
- Once the broth is boiling, add the couscous and stir to mix. Remove the saucepan from heat, cover, and let it sit for 5 minutes to allow the couscous to steam.
- After 5 minutes, fluff the couscous with a fork to separate the grains. Taste and adjust seasoning, adding more salt or spices if needed.
- Stir in the chopped dried apricots or raisins and fold in the toasted almonds or pine nuts for crunch (if using).
- Garnish with freshly chopped parsley or cilantro before serving.
