Description

Delight in these rich and indulgent Mint Brownies, featuring a fudgy chocolate base layered with a creamy, refreshing mint frosting and topped with a smooth chocolate glaze. Perfectly balanced with the earthy flavor of whole wheat pastry flour, these brownies are a crowd-pleaser for chocolate and mint lovers alike.

Ingredients

Brownie Layer

  • 3/4 cup unsalted butter (12 tablespoons)
  • 3 ounces unsweetened bakers chocolate (about 3 one-ounce squares)
  • 3 large eggs (at room temperature)
  • 1/2 teaspoon pure vanilla extract
  • 1 1/2 cups granulated sugar
  • 1/2 cup whole wheat pastry flour (or additional all-purpose flour)
  • 1/4 cup all-purpose flour

Mint Layer

  • 3 tablespoons unsalted butter (softened)
  • 1 1/2 cups powdered sugar
  • 1 1/2 tablespoons milk
  • 3/4 teaspoon pure peppermint extract
  • 2 drops green food coloring

Topping

  • 1 1/2 ounces unsweetened chocolate (approximately 1 1/2 one-ounce squares)
  • 1 1/2 tablespoons unsalted butter

Instructions

  1. Preheat: Place the oven rack in the center position and preheat the oven to 350 degrees F. Grease an 8×8-inch baking pan thoroughly and set aside to prepare for baking.
  2. Melt Chocolate and Butter: Using a heat-proof bowl set over simmering water (double boiler method), melt together the 12 tablespoons of unsalted butter and 3 ounces of unsweetened chocolate. Stir frequently to ensure it melts evenly without burning. Once melted, remove from heat and stir until the mixture is smooth. Allow it to cool completely.
  3. Prepare Brownie Batter: After the chocolate mixture has cooled, add the eggs one at a time, beating well after each addition. Mix in the vanilla extract and granulated sugar thoroughly. Gradually add the whole wheat pastry flour and all-purpose flour, beating until just blended. Be careful not to overmix.
  4. Bake Brownies: Pour and spread the batter evenly into the greased 8×8-inch pan. Bake for 20 to 25 minutes, or until the center appears set and a toothpick inserted into the middle comes out clean. Remove from oven and let cool completely to room temperature.
  5. Make Mint Frosting: In a medium bowl, beat together the 3 tablespoons of softened unsalted butter and 1 1/2 cups powdered sugar until creamy. Add the milk and pure peppermint extract, continuing to beat until smooth. Add 2 drops of green food coloring and mix until fully incorporated. Spread the mint layer evenly over the cooled brownie base.
  6. Chill Mint Layer: Place the brownie pan in the refrigerator and chill until the mint layer is firm, about 30 minutes to 1 hour.
  7. Melt Topping: Using the double boiler method again, melt together 1 1/2 ounces unsweetened chocolate and 1 1/2 tablespoons unsalted butter, stirring frequently until the mixture is smooth and glossy.
  8. Apply Topping: Drizzle the melted chocolate mixture over the chilled mint layer, then spread gently with a spatula to form a thin, even chocolate layer. Return the pan to the refrigerator to allow the topping to set completely.
  9. Serve: Once set, cut the brownies into 16 squares. These brownies cut more easily and taste best when served chilled, and they pair wonderfully with a large glass of milk. Enjoy your minty chocolate treat!

Notes

  • Ensure the melted chocolate mixture for the brownie base cools completely before adding eggs to prevent scrambling.
  • Using whole wheat pastry flour adds a subtle nutty flavor and makes the brownies more nutritious.
  • If you prefer a stronger mint flavor, you can adjust the peppermint extract slightly to taste.
  • For best results, refrigerate the brownies for at least an hour before slicing to allow layers to set firmly.
  • Store brownies in an airtight container in the refrigerator and consume within 4-5 days for optimal freshness.
