Description

These Mini Trifles are a delightful no-bake dessert featuring layers of airy angel food cake, fresh strawberries and blueberries, and creamy layers of whipped cream and strawberry-infused cream cheese. Perfect for a quick and elegant treat that requires minimal preparation but looks impressive in individual servings.

Ingredients

Fruit

  • 3 cups Fresh Strawberries
  • 1 cup Fresh Blueberries

Cake

  • Pre-made Angel Food Cake (cubed)

Dairy

  • 1 cup Heavy Cream
  • 8 ounces Cream Cheese

Sugar

  • ½ cup Powdered Sugar
  • ¼ cup White Sugar

Instructions

  1. Make the strawberry puree: Add two cups of strawberries into the food processor and blend until smooth. Strain the strawberry liquid through a sieve to remove any seeds, then set aside the smooth puree for later use.
  2. Prepare cake and strawberries: Cube the angel food cake into small pieces and slice the remaining 1 cup of strawberries. Set both aside for assembling the trifle layers.
  3. Make whipped cream: In a large mixing bowl, whip the heavy cream on medium-high speed for 3-4 minutes until soft peaks form. Scrape down the bowl, add powdered sugar, and continue whipping on high for another minute until stiff peaks form. Reserve about ½ cup of the whipped cream in this bowl and transfer the rest into a smaller bowl then refrigerate until needed.
  4. Prepare strawberry cream cheese: Using the same mixing bowl, add cream cheese and beat on medium-high speed for 1-2 minutes until smooth. Scrape down the sides, add white sugar and ½ cup of the reserved strawberry puree, then mix for another 1-2 minutes until well combined. Transfer to a separate bowl.
  5. Assemble the trifles – first layer: In individual serving cups, place a layer of cubed angel food cake on the bottom. Line the sides of the cup with sliced strawberries.
  6. Add strawberry cream cheese layer: Spoon the strawberry cream cheese mixture over the cake and strawberry layer evenly.
  7. Add second cake layer: Place another layer of cubed angel food cake on top of the cream cheese layer.
  8. Add whipped cream layer: Spoon a layer of the prepared whipped cream over the cake.
  9. Add blueberries: Add a layer of fresh blueberries on top of the whipped cream.
  10. Repeat layering: Repeat steps 5 through 9 for additional layers in each serving cup for a taller trifle effect.
  11. Chill before serving: Place the assembled mini trifles in the refrigerator and chill until ready to serve, allowing flavors to meld and desserts to set properly.

Notes

  • Use fresh, ripe berries for the best flavor and texture.
  • Angel food cake is preferred because of its light texture which pairs well with creamy layers.
  • For a quicker option, purchase pre-made whipped cream but homemade is recommended for freshness.
  • Straining the strawberry puree removes seeds, giving the cream cheese layer a smooth texture.
  • These trifles can be assembled a few hours in advance and kept refrigerated but are best enjoyed within 24 hours.
