Description
Mango Nice Cream is a creamy, dairy-free frozen dessert made from blended frozen bananas and mangoes, perfect for a healthy and refreshing treat that requires no added sugar or dairy.
Ingredients
Fruits
- 2 cups frozen bananas
- 2 cups frozen mango
Liquid
- ¼ cup non-dairy milk, less or more as needed
Toppings (optional)
- Fresh mango pieces
- Goji berries
- Toasted coconut
- Hemp hearts
Instructions
- Prepare the fruit: Add the frozen bananas and frozen mango to your blender or food processor. Begin blending while adding some of the non-dairy milk to help the mixture blend smoothly. If the mixture resists blending, chop the fruit into smaller pieces, add a bit more liquid, scrape down the sides, or allow the fruit to defrost slightly before blending again.
- Blend until creamy: Continue blending until you achieve a smooth, creamy texture similar to soft-serve ice cream. Use a tamper if your blender has one to help with the blending process. Once blended, transfer the nice cream to a bowl.
- Add toppings and serve: Top your mango nice cream with your choice of fresh mango pieces, goji berries, toasted coconut, and hemp hearts for texture and added flavor. Enjoy immediately for best texture.
- Store leftovers: Freeze any leftovers in an airtight container for up to one week. Note that the texture may become slightly less creamy after freezing.
Notes
- Use ripe bananas and mangoes for maximum sweetness and creaminess.
- Non-dairy milk such as almond, oat, or coconut milk works best for creaminess and flavor.
- If the mixture is too thick to blend, gradually add more non-dairy milk in small amounts.
- Letting the blended nice cream sit at room temperature for a few minutes before scooping can improve scoopability.
- Consume fresh for best texture and flavor; refreezing can alter creaminess.
