Description

These healthy homemade Mango Cherry Popsicles combine the natural sweetness of pureed mango and thawed cherries with creamy coconut milk, making a refreshing and nutritious frozen treat perfect for warm days or any time you want a guilt-free dessert.

Ingredients

Ingredients

  • 119 gms (½ Cup) Frozen Cherries, thawed and pitted
  • 170 ml (¾ Cup) Pureed Mango
  • 120 ml (½ Cup) Coconut Milk

Instructions

  1. Prepare cherry mixture: In a blender, add the thawed pitted cherries and coconut milk, then close the blender jar with the lid.
  2. Blend cherry mixture: Blend the cherries and coconut milk until smooth and creamy, creating a vibrant cherry base for the popsicles.
  3. Fill moulds halfway: Pour the blended cherry mixture to fill half the height of each popsicle mould.
  4. Add mango puree: Top off the remaining half of each mould with the pureed mango, layering the flavors beautifully.
  5. Close and set: Secure each popsicle mould with its handle to prepare for freezing.
  6. Freeze popsicles: Place the moulds upright in the freezer overnight or for at least 6 hours, allowing the popsicles to fully set and harden.
  7. Serve and enjoy: After sufficient freezing time, remove the popsicles from the moulds and enjoy a delicious and healthy frozen treat.

Notes

  • Ensure cherries are fully thawed and pitted before blending for smooth texture.
  • Use ripe mangoes for the best flavor in the puree, or use store-bought mango puree for convenience.
  • Adjust sweetness by adding a natural sweetener like honey or agave if desired.
  • For vegan option, confirm that coconut milk is 100% plant-based and free of additives.
  • Use popsicle moulds that allow easy removal to avoid breaking the popsicles.
