Description

These Keto Rum Balls are a delicious low-carb treat perfect for those following a ketogenic lifestyle. Made with almond meal, coconut flour, and sweetened naturally with powdered monk fruit, they offer a rich chocolatey flavor balanced with a hint of rum. These no-bake rum balls are easy to prepare, making them a great festive snack or holiday dessert that you can enjoy guilt-free.

Ingredients

Dry Ingredients

  • 1/2 cup cocoa powder (dutch process)
  • 1/4 cup powdered monk fruit
  • 1 cup finely shredded coconut (unsweetened)
  • 1/2 cup almond meal
  • 1/2 cup coconut flour

Wet Ingredients

  • 1/2 cup butter (melted)
  • 1-2 Tbsp rum

Instructions

  1. Prepare baking sheet: Line a large baking sheet with parchment paper to prevent sticking and make clean-up easier.
  2. Shred coconut: Pulse the unsweetened shredded coconut in a blender or food processor to break it down further into finer pieces for better texture in the rum balls.
  3. Mix ingredients: In a medium-sized mixing bowl, combine the cocoa powder, powdered monk fruit, finely shredded coconut, almond meal, coconut flour, melted butter, and rum. Stir thoroughly until a dough forms.
  4. Test dough consistency: Form a small test ball with the dough to check if it holds shape. If the dough crumbles, add more melted butter or coconut oil. If it’s too wet and sticky, add a bit more coconut flour or almond meal to balance the texture.
  5. Shape rum balls: With clean hands, shape the dough into small balls about 1 inch in diameter. This recipe should yield about 18-20 rum balls.
  6. Coat rum balls: Roll each rum ball in a coating of your choice such as powdered monk fruit, finely shredded coconut, cocoa powder, or crushed freeze-dried berries for added flavor and texture.
  7. Chill: Refrigerate the rum balls for 1-2 hours to firm up. Once set, store them in the fridge for up to two weeks or freeze them for up to three months.

Notes

  • If you want a stronger rum flavor, adjust the amount of rum used, but be cautious as too much liquid can affect the texture.
  • Ensure the shredded coconut is unsweetened to keep the recipe low-carb and keto-friendly.
  • If preferred, use erythritol instead of powdered monk fruit for sweetening.
  • The coating can be customized with other low-carb options like crushed nuts or cocoa nibs.
  • Keep the rum balls refrigerated to maintain firmness, especially in warmer climates.
