Description

Delight in this creamy, low-carb Keto Raspberry Jello Mousse that perfectly combines the tartness of fresh raspberries with the smooth richness of cream cheese and whipped cream. This sugar-free dessert comes together in just 15 minutes and is an ideal treat for ketogenic diets or those seeking a light, refreshing mousse.

Ingredients

Jello Mixture

  • 2 (.3oz) boxes Raspberry Sugar-Free Jello
  • 1/4 cup Swerve Confectioners (sugar substitute)
  • 1 cup boiling water
  • 1 cup fresh or frozen and thawed raspberries

Cream Cheese & Cream

  • 6 oz softened cream cheese, divided (2 oz for blending, 4 oz for whipping)
  • 1 1/2 cups heavy whipping cream

Instructions

  1. Dissolve Jello and Sweetener: In a small bowl, dissolve the raspberry sugar-free jello powder and Swerve confectioners in 1 cup of boiling water, stirring well until completely dissolved.
  2. Blend Jello and Raspberries: Add the dissolved Jello mixture, fresh or thawed raspberries, and 2 ounces of softened cream cheese into a blender. Blend everything until smooth and creamy.
  3. Whip Cream and Cream Cheese: In a large mixing bowl, combine the remaining 4 ounces of softened cream cheese with the heavy whipping cream. Use an electric mixer to whip the mixture until stiff peaks form, creating a fluffy texture.
  4. Combine Mixtures: Slowly incorporate the blended Jello and raspberry mixture into the whipped cream and cream cheese, mixing gently with the electric mixer until fully combined and smooth.
  5. Chill and Serve: Spoon the mousse into 8 small serving glasses or bowls, or one large bowl. Refrigerate for at least 1 hour to set. Serve chilled and enjoy your refreshing keto-friendly dessert.

Notes

  • Use softened cream cheese for easier blending and whipping.
  • If fresh raspberries aren’t available, frozen raspberries thawed fully work well.
  • Ensure the mousse chills adequately to achieve the best texture.
  • This dessert is ideal for low-carb and keto dietary plans.
  • For added texture, garnish with a few fresh raspberries or a sprig of mint before serving.
