Description
Indian Style Pineapple Pudding is a creamy, chilled dessert combining the sweetness of condensed milk and cream with the fresh tang of pineapple, thickened naturally with agar agar. This easy-to-make pudding features fragrant cloves and a smooth texture that’s perfect for a refreshing treat after meals.
Ingredients
Dairy & Sweeteners
- 400 grams / 1 tin Condensed Milk (milkmaid)
- 2 cups (500 ml) Milk
- 200 ml cream (Amul cream)
- 1/2 cup sugar
Agar Agar Mixture
- 10 grams agar agar sheet / china grass
- 1 1/2 cup water (for soaking and boiling agar agar)
Fruit & Spices
- 1 small pineapple (about 2 cups pineapple pieces)
- 2 cloves
- 1/2 cup water (for boiling pineapple and cloves)
Instructions
- Prepare Pineapple: Clean and cut the pineapple into small bite-size pieces. Set aside.
- Make Clove-Sugar Mix and Boil Pineapple: Grind 2 cloves in a blender with 1/2 cup sugar to a fine powder. Add the pineapple pieces, sugar-clove mixture, and 1/2 cup water. Bring this to a boil and let it boil for 5 minutes. Remove from heat and set aside.
- Prepare Milk Mixture: Mix the condensed milk, 2 cups plain milk, and 200 ml cream. Bring this mixture to a boil. Once boiled, set it aside.
- Soak and Melt Agar Agar: Soak 10 grams agar agar sheets in 1 1/2 cups water for 10 minutes. Boil the soaked agar agar mixture on medium flame until it completely melts and becomes clear.
- Combine All Mixtures: Mix together the hot milk mixture, melted agar agar mixture, and pineapple mixture. Ensure all components are slightly hot for smooth setting. If refrigerated, briefly reheat the pineapple mix on low flame for a couple of minutes.
- Set the Pudding: Pour the combined mixture into dessert cups and refrigerate for 5-6 hours until set.
- Serve: Serve the pudding chilled for a refreshing dessert experience.
