Ingredients
Shortbread Crust
- ¼ cup sugar
- 1 ¼ cups flour
- ⅔ cup butter, softened
Caramel Layer
- ½ cup butter
- ½ cup brown sugar
- 2 tablespoons corn syrup
- ½ cup sweetened condensed milk
Chocolate Topping
- 2 cups milk chocolate chips
- 1 teaspoon vegetable oil
Instructions
- Preheat and Prepare Pan: Preheat your oven to 350℉ and grease a 9×9 inch pan with cooking spray to prevent sticking.
- Make Shortbread Crust: In a small bowl, combine sugar and flour. Cut the softened ⅔ cup butter into the mixture using a butter knife, mixing until evenly sized crumbs form.
- Bake Crust: Press the crumb mixture evenly into the bottom of the prepared pan. Bake for 20 minutes, or until the edges turn golden brown.
- Cool Crust: Remove the pan from the oven and allow the crust to cool completely before adding the next layers.
- Prepare Caramel: In a medium saucepan over medium heat, combine ½ cup butter, brown sugar, corn syrup, and sweetened condensed milk. Bring to a boil while stirring constantly to prevent burning. Continue to stir for an additional 5 minutes once boiling, then remove from heat and stir for 2-3 more minutes.
- Add Caramel to Crust: Pour the hot caramel mixture evenly over the cooled shortbread crust. Let it cool until firm, using the refrigerator to speed up the process if desired.
- Melt Chocolate: In a microwave-safe bowl, combine chocolate chips and vegetable oil. Microwave for 1 minute, then stir. Continue microwaving in 15-second intervals, stirring after each, until the chocolate mixture is smooth and fully melted.
- Top with Chocolate: Pour the melted chocolate evenly over the caramel layer and allow to cool and harden at room temperature or in the fridge.
- Slice and Serve: When the chocolate has hardened, use a warm knife to cut the bars into 9 squares for easier slicing and cleaner edges. Serve and enjoy!
