Ingredients
Dry Ingredients
- 1½ cups unbleached all-purpose flour
- ½ teaspoon baking soda
- ⅛ teaspoon salt
- ½ cup cacao powder
Wet Ingredients
- ¾ cup butter, room temperature
- 1 cup raw sugar
- 3 tablespoons sour cream
- 1 teaspoon vanilla extract
- 2 eggs
Other Ingredients
- ½ cup chopped semi-sweet cooking chocolate, melted
- ½ cup marshmallow creme (Fluff)
- Funfetti (for decoration)
Instructions
- Mix dry ingredients: In a mixing bowl, whisk together the flour, baking soda, salt, and cacao powder until well combined. Set this mixture aside.
- Cream wet ingredients: In another mixing bowl, use a hand mixer to cream the butter, raw sugar, sour cream, and vanilla extract together until fully combined and creamy.
- Add eggs: Add the eggs one at a time to the creamed mixture, mixing well after each addition to incorporate them thoroughly.
- Combine wet and dry: Pour half of the dry ingredient mixture into the wet ingredients and mix until nearly incorporated. Gradually add the remaining dry ingredients and mix well. Avoid overmixing to keep the cookies tender.
- Form dough balls: Using a medium cookie scoop (approximately 1½ tablespoons), scoop the dough into balls. Place the balls spaced apart in the air fryer basket lined with parchment paper to prevent sticking.
- Air fry cookies: Air fry the cookie dough balls at 320℉ for 8 to 10 minutes until cooked through, with a tender yet slightly crisp exterior.
- Cool cookies: Let the cookies cool in the air fryer basket for 2 to 3 minutes, then transfer to a cooling rack to cool completely before decorating.
- Melt chocolate: While cookies cool, melt the chopped semi-sweet cooking chocolate in a microwave-safe bowl, stirring every 15 seconds to ensure smooth melting. This should take about 2 minutes.
- Dip and decorate cookies: Once cooled, dip half (11 cookies) into the melted chocolate and sprinkle with funfetti immediately. Set aside to harden; refrigerate if in a hot or humid environment to speed hardening.
- Spread marshmallow creme: On the flat side of the remaining cookies, spread 1 to 1½ teaspoons of marshmallow creme evenly.
- Assemble sandwich cookies: Press a marshmallow-spread cookie gently against a chocolate-coated cookie to form a sandwich. Place assembled sandwiches in the refrigerator until ready to serve, allowing the filling to set.
- Enjoy: Serve these delightful chocolate and marshmallow sandwich cookies as a special treat perfect for parties or cozy snacking.
Notes
- Using parchment paper in the air fryer basket helps prevent the sticky dough from adhering during cooking.
- Do not overmix the dough after adding dry ingredients to avoid tough cookies.
- If you live in a warm climate, refrigerate the dipped cookies to help chocolate set faster.
- These cookies are best enjoyed within 3-4 days when stored in an airtight container in the refrigerator.
- Funfetti decoration is optional but adds a festive and colorful touch.
