Ingredients

Macaron Shells

  • 1 cup (100g) almond flour*
  • 1½ cups (180g) powdered sugar*

  • ¼ teaspoon cream of tartar
  • ¼ cup granulated sugar
  • ¼ teaspoon red gel food coloring*
  • ½ teaspoon pure vanilla extract

Vanilla Buttercream Filling

  • ¼ cup unsalted butter (softened)
  • 1 cup powdered sugar
  • 2 tablespoons heavy whipping cream
  • 1 teaspoon pure vanilla extract


Instructions

  1. Prepare Heart Templates: Print out 4 copies of the heart template to guide piping the macaron batter into precise heart shapes.
  2. Sift Dry Ingredients: Using a large sieve, sift the almond flour and powdered sugar together twice into a large bowl to ensure a fine, lump-free mixture. Set aside.
  3. Beat Egg Whites: In a large bowl or stand mixer bowl, combine egg whites and cream of tartar. Beat at medium-low speed until soft peaks form.
  4. Add Sugar and Color: Slowly add granulated sugar while continuing to beat until almost stiff peaks form. Then add red gel food coloring and vanilla extract, beating until stiff peaks form, tested by tipping the bowl upside down without falling.
  5. Fold Dry Ingredients: Gently fold one-third of the dry mixture into the egg white mixture using a spatula until fully incorporated. Continue folding in the rest until the batter flows off the spatula in a smooth figure-8 without breaking, being careful not to overmix to retain air bubbles.
  6. Pipe Hearts: Place two heart templates side by side on a cookie sheet and cover with parchment paper. Pipe batter onto parchment following the heart shapes and use a toothpick to spread batter to the edges, shaping a pointed bottom.
  7. Remove Air Bubbles: Tap the pan five times against the counter to bring air bubbles to the surface. Pop any visible bubbles with a toothpick.
  8. Rest Batter: Let the piped macarons rest in a dry area for 45 minutes to 1 hour until their tops are no longer sticky to the touch, which helps form the macaron skin.
  9. Preheat Oven: Set oven temperature to 315°F (160°C).
  10. Bake Macarons: Bake the macarons one sheet at a time for about 13 minutes. The macarons will rise and develop characteristic delicate feet as they bake.
  11. Cool Macarons: Transfer macarons to a cooling rack and cool for 10 minutes with the parchment on the tray. Then remove the tray, leaving them on the rack until completely cool, about another 10 minutes. The macarons should easily peel from the parchment.
  12. Make Buttercream: Beat softened butter with an electric mixer on medium speed until creamy. Gradually add powdered sugar and mix until smooth.
  13. Finish Buttercream: Mix in heavy whipping cream and vanilla extract until well combined and fluffy.
  14. Pipe Filling: Transfer buttercream to a piping bag fitted with a large round tip. Pipe a generous amount onto the flat side of half the macaron shells.
  15. Assemble Macarons: Gently sandwich the other half of the macaron shells on top of the buttercream filling to form the heart-shaped macarons.
