Instructions
- Heat Coconut Milk: Pour the coconut milk into a medium saucepan and heat on medium-high heat until it begins to simmer. Stir frequently to prevent the milk from scorching on the bottom of the pan.
- Prepare Cornstarch Slurry: In a separate bowl, whisk together the cornstarch and water until you have a smooth, lump-free mixture.
- Combine Ingredients: Gradually add the sugar and the cornstarch-water slurry to the simmering coconut milk while stirring continuously to evenly distribute and prevent lumps.
- Thicken Mixture: Continue stirring as the mixture thickens immediately to a glue-like consistency. Once thickened, remove the saucepan from heat and keep stirring occasionally for 5 minutes to prevent skin formation.
- Transfer and Smooth: Pour the thick pudding into a square or rectangular container. Use a spoon or spatula to smooth the surface evenly.
- Cool and Chill: Leave the pudding uncovered at room temperature for about one hour. Then cover it tightly and refrigerate for at least four hours to allow it to set firmly.
- Serve: Once chilled and firm, cut into squares. Optionally, coat each square with toasted shredded coconut for an added crunch and nutty flavor.
