  1. Prepare the Cornstarch Mixture: In a small bowl, combine the cornstarch and water. Stir thoroughly until the cornstarch is completely dissolved and no lumps remain. Set this mixture aside.
  2. Heat Coconut Milk and Sugar: Pour the entire can of coconut milk into a small saucepan over medium heat. Add the sugar, and whisk the mixture continuously. Bring it close to boiling to dissolve the sugar and warm the milk evenly, ensuring it does not scorch.
  3. Add Cornstarch Mixture: Slowly pour the cornstarch and water mixture into the saucepan while continuously whisking to incorporate and prevent lumps from forming.
  4. Cook Until Thickened: Reduce the heat to low. Continue cooking the mixture for 10 to 15 minutes, whisking frequently to prevent sticking or burning. The haupia is ready when it thickens significantly, becomes almost gluey, and begins to pull away from the sides of the pan when whisked.
  5. Set the Pudding: Grease an 8×8 inch pan or line it with parchment paper. Pour the thickened haupia mixture into the pan and let it cool at room temperature for 15 minutes.
  6. Chill and Serve: Transfer the pan to the refrigerator and chill for 1 to 2 hours until fully set. Once set, cut into squares and serve chilled for a refreshing dessert.
