Ingredients

For the Grilled Plantains

  • 2 ripe plantains
  • 2 tablespoons (28g) melted coconut oil

For the Honey Peanut Butter Sauce

  • 2 tablespoons (42g) honey (more if desired)
  • ¼ cup (68g) peanut butter (or almond butter)


Instructions

  1. Preheat the grill: Heat the grill on medium-high heat until it reaches 375-400°F (190-205℃) to ensure optimal grilling temperature for caramelization.
  2. Prepare the plantains: Cut off both ends of the plantains to make peeling easier. Score a shallow line lengthwise down the plantain, just through the peel, then pull back and remove the skin carefully.
  3. Slice and oil the plantains: Cut the peeled plantains in half lengthwise. Brush both sides of each plantain half evenly with melted coconut oil to prevent sticking and promote browning on the grill.
  4. Grill the plantains: Place the plantain slices on the preheated grill. Cook for 2-3 minutes per side, watching for nice grill marks and a light browning. Flip with a spatula carefully and grill another 2-3 minutes until cooked through and tender.
  5. Rest and serve: Remove the grilled plantains from the grill and transfer them to a serving platter. Let them cool for a few minutes to allow flavors to set.
  6. Prepare the honey peanut butter sauce: In a small bowl, stir together the honey and peanut butter until smooth and well combined. Adjust sweetness by adding more honey if preferred.
